Being able to make golden statues like those in the Castle BDPs, and/or an NPC (maybe in Law's End?) that trades you items for Gold Bars (like Air with Stolen Goods), seem like a couple of good ideas.

I don't know, I feel like Gold Bars are best kept as a niche; trying to goad people into hauling around a ton of 10-weight bars for other things sounds like a dick move. Especially when you could have a shot at stealing the statues found in Castle Dungeons as an alternative.*
